8 AMAZING LOW CARB MUG CAKES

Being on a low carb diet doesn’t mean you can no longer have cake!

Try these seven variations of our standard mug cake recipe for mouthwatering treats that taste better than a gluten filled diabetes treat (aka normal cake).

The basic recipe is the same, but we’ve made slight tweaks to give you varieties to keep your sweet tooth satisfied. In just five minutes you can have a piping hot and delicious cake!

The Basic Recipe

Ingredients

2 tbsp coconut flour
2 tbsp xylitol or erythritol
1/2 tsp baking powder
Pinch of salt
3 tbsp coconut milk
1.5 tbsp coconut oil, melted
1 egg
1/2 tsp vanilla extract

(ICING)

2 tbsp coconut milk
2 tbsp grass fed ghee
4 tbsp whey
1 tbsp xylitol

Instructions

1. In a bowl or mug, add all dry ingredients together and mix.

2. Next, add wet ingredients to the bowl and mix thoroughly.

3. Microwave for 2 minutes (your bowl will be hot) and serve with the easiest icing recipe ever (recipe below)! Honestly, we’ve never had our mug cake without the icing, and it’s just not the same without it.

Icing recipe

In a bowl, mix together all ingredients. Done.


Mug Cake Variations

1. Cinnamon Bun

– Add 1 tsp cinnamon
– Add 1/2 tsp nutmeg

2. Vanilla chocolate chip

– Add an extra 1/2 tsp vanilla
– Add 1/4 cup Lily’s sugar free chocolate chips

3. Lemon

– Add 1 tsp lemon extract

4. Orange

– Add 1 tsp orange extract

5. Chocolate

– Add 1 tbsp chocolate powder
– Add an extra 1/2 tbsp coconut milk

6. Blueberry muffin

– Add 1 tsp lemon extract
– Add a handful of blueberries

7. Double Chocolate

– Add 1 tbsp chocolate powder
– Add an extra 1/2 tbsp coconut milk
– Add 1/4 cup Lily’s sugar free chocolate chips

8. Almond Joy

– Add an extra 1/2 tsp vanilla extract
– Add 1/4 cup shredded unsweeted coconut
– Add 1/4 cup Lily’s sugar free chocolate chips
